Pad Thai Lunch!

Today is the first day that we're putting up a post for our blog! Wahoo! Milestone already accomplished! (: We've made other food, besides today (nope, we've been starved to death our whole lives!)- I mean since dad and mom have come up with the idea. :P But I wasn't there to see the recipe, or have it passed onto me. I suppose that I shall request that from mom- then our blog will be current and up to date! A heads up on what you have to look forward to- Greek pasta salad, chicken vindaloo- psh, I'm a horrid speller, but it's Indian food! Almost like Indiana, except without the 'a'. Both of those things were really good- highly recommend.

Today for lunch I made... okay with some help and pushing from mom- and can't forget Rebecca who smashed the garlic, opened the bean sprouts, and poured the sauce into the pan- she will want to be recognized for helping as well "Pad Thai"! It turned out pretty good! Oh, and Tamela also told me to wait to let the noodles soak, so she must get some credit for that!

We combined a few recipes and of course, as always, mom added a bit of her touch to it- so that will be included in here also, so we can have the best recipe! We got part of the ingredients for the sauce from about.com "Easy Chicken Pad Thai, by Darlene Schmidt"- so we want to include that as well!

Ingredients:
-8 oz Thai rice noodles, linguini-width (we used banh ph'o' thu'o'ng hang... No idea what that means... but it's on the top of the package- which comes in a bag. Underneath says "chantaboom rice stick. royal blossom". The ingredients are just rice flour and water)
-4 cloves garlic, minced (don't know what that means- we just used a garlic presser)
-2 Tablespoons olive oil
-Handful of fresh bean sprouts (calls for 3 cups, but we don't really like those; especially Becca- she would omit those altogether!)
-2 eggs

Pad Thai Sauce:
-1/3 cup chicken broth
-3 Tbsp rice vinegar
-1 Tbsp line juice
-3-4 Tbsp brown sugar (I used 3 1/2 Tbsp, you know, just met in the middle!)
-2 Tbsp fish sauce
-1 Tbsp soy sauce
-Big spoonful of peanut butter

Preparation:
1.) Bring a large pot of water to a boil and remove from heat. Dunk in your rice noodles. We left them in for about 6 minutes and then drained them, rinsed them in cold water for just a few seconds, and then let them dry in the container until we needed them next.
2.) Make the Pad Thai Sauce by combining the sauce ingredients together in a cup. Stir it well! I didn't add the peanut butter until later, because I didn't think about it. But add it into the rest of the sauce, and then you won't have chunks of peanut butter in your dinner!
3.) Scramble eggs in a small frying pan and then set aside to uses in noodles.
4.) Warm up large frying pan over medium-high heat. Add olive oil plus garlic, and stir it up until it's brown- but don't wait to long or you'll have clumps of garlic, and then you'll have to find them and smash them!
5.) Add the noodles, eggs, and pour the Pad Thai Sauce on top. Using two spatulas, wooden spoons, or other utensils (I used wooden spoons, because the other dishes were dirty, and we were out of soap to clean them- so that's all we had!) immediately stir-fry the noodles. Use a gentle "lift and turn" method (like tossing a salad) to prevent noodles from breaking.
6.) This is the part that Tamela helped with. Mine looked really runny on the bottom, and if you leave it on high, while continuing to "toss" the noodles frequently, then the noodles will absorb the sauce.
7.) Add the bean sprouts and continue "tossing" a few minutes.
8.) I left this part out on accident, because it was the last step, and I wasn't really following the recipe, but it looks like it would be really good! Top with generous amounts of fresh coriander (no idea what that is...), spring onion, and crushed/chopped nuts. Add fresh lime wedges (let them squeeze their own lime on top- just don't get it in your eye! And also don't take out your contacts right after!).

You're now finished! When I first looked at the recipe, I was like NOOOO this is going to take the rest of my life to make this!! But it doesn't actually take to long- and it was very good! I put some in a container for Tamela and I to take to play practice tonight! We'll let you know how it tastes when it's cold!
